Well I haven’t been posting much because I’ve been so tired.
But for a good reason!

Finally, 12 weeks along, I am starting to get my energy back.
I wanted to post on our New Year’s Ravioli a few weeks ago, but better late than never, and of course it doesn’t have to be a New Year’s meal. It should definitely be a meal for a special occasion since it takes a long time to prepare. I used the ravioli mold my parents gave me for Christmas to make these. George loved flattening out the noodles while I filled them with the meat mixture. Julia even got in on the fun!
I found the recipe from livelovepasta.com. I substituted ground beef for veal, but otherwise I followed the recipe exactly. The recipe made about 100 raviolis, so we were able to freeze lots of them for future meals.
It took so long to make that poor Julia got hungry before it was dinner time, so she had to have leftover spaghetti for dinner while she watched us continue to make the pasta. She did not mind. Since it was New Year’s and we were planning to stay up late anyway, we decided to wait until Jules was in bed to eat our dinner. It was quite a relaxing and lovely way to ring in the New Year.
